Easy Peasy Cupcakes

1 c. brown rice flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. sugar
1/4 c. oil
1 egg
1/2 tsp. vanilla
3/4 c. milk

Whisk together dry ingredients. Add wet ingredients and stir until well combined. Divide into 12 muffin cups and bake at 350 degrees for 20 mins. (Best served the day they are baked.)
