"Graham Cracker" Crust

1/3 c. white rice flour
1/4 c. + 1 T. sorghum flour
1/4 c. tapioca flour
1/4 c. arrowroot powder
1/4 c. ground flax seed
2 T. ground oatmeal (or sorghum flour)
1/2 tsp. xanthan gum
1/2 tsp. cinnamon
1/4 c. brown sugar
1/4 tsp. baking soda
1/8 tsp. salt
6 T. butter
1 T. honey
1/2 tsp. vanilla
2 T. warm water

In a bowl, mix all of the dry ingredients together. Cut butter in with a pastry cutter.  Form a well and add water, honey, and vanilla.  Blend until a dough is formed; allow to sit for 15 mins.  Press dough into the pie plate. Bake at 325 degrees for 20 mins.

A little trouble, but well worth it.
