Coconut Tapioca Pudding
1 can coconut milk
1 can water
1/3 c. tapioca (instant)
1 tsp. vanilla
1/3 c. maple syrup/honey.
Heat the first four ingredients until boiling. Remove from heat and stir in sweetener. Cool and serve.
